Basil pesto

Today I'm gonna share my favorite pesto recipe you can use in plenty various dishes starting from pesto pasta to just dipping your veggies in or spreading on a panini or just a basic sandwich. 

As a chesse addict for years it took me awhile to get used to recipe without parmesan and edit it to perfection but now I can't be happier about it. Of course if you're not necessarily into following the rules and measurements play with it a little to create the best option for you. 


If you ever get a bit bored with it but still have pesto cravings just choose different oil, nuts and add nutritional yeast for a cheesy taste.








Whether you're using blender, food processor or more old fashion method it will always end up equally delicious!








INGERDIENTS



  • 3 garlic cloves
  • one basil tree (about two handfulls) 
  • pinch of salt
  • 1 tbls of vegetable oil 
  • 1 tbls sunflower seeds
  • optional: nutritional yeast


INSTRUCTIONS


What you need to do is basically throw all of the ingredients to the food processor and wait for pesto to prepare itself.


Just like any other recipe so far it's very flexible so you can use whatever oil you have at your home and add spices of your choice to make it different every time. What I got here is a base that is amazing even by itself.

Quick and easy everyday breakfast

One of my favorite and at the same time easiest breakfast I make for myself aka the sandwich with fruit and almond butter. The recipe is also very flexible since you can use whatever kind of bread you like and spread it with a nut butter of your choice, bought or homemade.


Depending on the season you can always get whatever fruit you prefer and have at home at the time. Whenever I use banana I like to add something a bit more sweet-sour like berries or an apple.






Ingredients


  • almond butter 
  • bread slices
  • raspberries
  • banana


Instructions


I don't think that part of a post is much needed here but here you go. Spread the nut butter on bread slices and add seasonal fruit (in my case raspberries and banana) on top.

My obsession with avocados started many years ago when I first started them not knowing yet what veganism was. Below you'll find a recipe for a quick, guilt-free dessert you can eat basically anytime you want.
I was never good with measurements when it comes to cooking so it makes this recipe even more fun. You can use whatever milk you wish (or have in your fridge at the moment), anything you'd like to put on top of it from granola to any kind of fruit you have or is available during that time in year and whatever sweetener (vanilla extract, stevia, syrup) or none at all if like me you aren't the biggest fun of sweet treat, even though I realize I'm in a minority here.




Ingredients

  • 1/2 cup cocoa powder
  • 1 avocado
  • 2 tablespoons plant milk (almond, rice, soy, oat, hemp, coconut)
  • 1 tablespoon of maple or agave syrup
  • for serving: fresh strawberries 



Instructions



Just through our four ingredient in a food blender, processor and serve it with fresh fruit on top
